It's a Cheesy Day...

Today is a "NOT so Perfect" day for me. Let me tell you why...

My first batch of cup cakes didn't turn out well!! It deflated!! I'm so so angry.. I did some research on it and guess what i found out!

"do not open the oven door for the first 14 minutes or else the cupcakes will deflate"

How would I know!!! Can you believe it or not??!! I brought the cakes out on their 14th minute!! sigh...

Anyway, me being me.. I baked the 2nd batch. I made sure i waited till my alarm rang after 15minutes and Voila!!.... my cupcakes turned out as I imagined them to be. Instead of using buttercream, I used cream cheese to decorate my cuppy cakes...:)





Madagascar Vanilla Cupcakes

For those of you who are interested, here's the recipe..:)

150 gm cake flour,sifted
1 1/2tsp baking powder
1/4 tsp fine salt
200 gm caster sugar
2 tsp MADAGASCAR BOURBON PURE VANILLA BEAN PASTE
115 gm unsalted butter
2 large eggs
125 gm milk

1. Preheat oven to 350F(180C) on fan assisted mode.
2. Sift together flour, baking powder and salt. Set aside.
3. Cream butter in a mixer for about 2 minutes until smooth and lightened in colour.
4. Add sugar 2 tbsp at a time, taking bout 8-10mins to blend thoroughly - the butter will be almost white in colour.
5. Lightly beat the eggs in a small bowl with a fork. Add to the mixer bowl in a dribble. After the eggs have been incorparated, add vanilla paste.
6. Add dry ingredients alternately with the milk.
7. Bake in the preheated oven for 15-20mins(depending on your oven), or until cupcake are golden brown on top and a toothpick inserted into the centre comes out dry.

REMEMBER!!! DO NOT OPEN THE OVEN DOOR FOR THE FIRST 14MINS OR ELSE THE CUPCAKES WILL DEFLATE!!!!!!

As for the Cream Cheese Frosting:

1 pack Philly Cream Cheese
2 cups icing sugar, sifted


It is that simple!!

Tomorrow Jon will be going to Msia for work for 3 days. It's not really work but some meeting & team building thingy. I have packed it nicely for him to bring along. Show off time!! ........ ;-) (All smiles)



I hope his colleagues will enjoy it as much as i enjoyed baking it!! Oh well... there's always room for improvement if they don't like it..
